Recipe - Cauliflower Pizza Crust


Yesterday was Kingsley's Birthday and he requested this Cauliflower Pizza recipe as his special birthday meal.  Its gluten free, low carb and best of all delicious! I initially found this pizza crust recipe on Recipe Girl.

Ingredients:
1 medium head cauliflower, cut into florets
1 egg
1/2 cup mozzarella, shredded
1 teaspoon Italian seasoning blend
1 cup pizza sauce/tomato sauce
1 cup Canadian Bacon sliced
1 cup pineapple sliced
3/4 cup mozzarella, shredded
1/4 cup cheddar, shredded

Directions:
Rice the cauliflower with grater (this is the least fun and most labor intensive part of the process), place in a microwave safe dish and microwave for 8 minutes or until cooked.


Place the cauliflower in a tea towel and squeeze as much moisture out as you can.

Mix the cauliflower, egg, mozzarella, oregano, salt and pepper, press the mixture onto a baking mat or parchment paper lined baking sheet and bake in a preheated 450F oven until lightly golden brown, about 15-20 minutes.


Place pizza sauce on top of the crust. Then top with mozzarella, cheddar Canadian bacon and Pineapple slices. Bake again until the cheese is bubbling, about 10-15 minutes.
