Maple Leaf Canadian Ball

Last Saturday Kingsley and I attended the Maple Leaf Canadian Charity Ball to benefit the SPCA.  I have been fostering kittens for the SPCA since we moved to Singapore so this was a cause that was very dear to my heart. Also it is always fun to have a good excuse to get dressed up.  Jen came over to get ready at the house with me and we went across the street to the Pebble Bay condo's hair salon for our updos.  Oh the convenience of living next to a massive condo complex!

Overall it was a fun night with friends, amazing food, dancing and a silent auction.  I dont yet know how much was raised for the SPCA but I am hoping it was a significant sum! It is an organization that does so much for animals and yet has struggles so much with funding.  I know from personal experience there were times when one of my kittens needed a medication and yet there were no resources for the SPCA to be able to purchase that medication so the clinic vets would try and find some kind of alternate treatment or I would take the kittens to a regular clinic for the medication.  I am hopeful that the Canadian Associations donation will make a difference for the many animals that the SPCA saves everyday.



Bikram Harborfront - 30 Day Challenge

Last Monday I completed a 30 Day Bikram Yoga Challenge.  How and why I decided to take on this challenge is still a bit of mystery to me but somehow my name ended up on the challenge board and then I was too stubborn to quit without getting 30 stickers in a row! 

I spent 5 out of the 30 days at the Bikram yoga studio in Bangkok which was the hottest most humid yoga I have ever endured. My first class I almost had a panic attack from the oppressive heat and had to beg the teacher to bring me more water midway thorough class.  I also watched one girl throw up in class and two others just get up and walk out (a big time no no in Bikram etiquette).  It was seriously intense.  My yoga postures did not really improve during those 5 days but my stamina and heat endurance changed dramatically. Since the "Bangkok 5" I have never felt like the room was too hot and the amount of water I need each class has diminished. 

There were many many times during the challenge when I felt sore, permanently dehydrated and exhausted but in the end I have to say I am pretty happy with the changes I have seen in my flexibility and overall yoga practice. I also noticed an improvement in my cardio stamina and overall muscle tone. 

Another change was that I graduated from wearing a long yoga top to a short yoga top which in the beginning I swore I would never do.  I now understand the purpose of a short top - which is to see your stomach in the mirror to improve alignment in certain postures and overall stomach tone (ie remind yourself to suck it in!). I lost count of the number of times I was reminded by instructors "stomach, stomach, stomach, compression of the abdominal wall, contraction of the abdominal muscles".  My least favorite line in the entire Bikram dialog.  But its all for the overall good of my health and body so I am very happy and proud to have completed 30 days in a row!




Worst Birthday BBQ Ever

I planned a fun casual Birthday BBQ by the Koi Pond for Kingsley last Sat evening.  It was such a beautiful day until literally 5 minutes after we started grilling when the heavens opened and a massive thunderstorm hit.  We are talking torrential rain, lightening that quite possibly struck a tree by the Koi Pond and thunder so loud your teeth rattled.  Needless to say the BBQ had to be rushed inside pronto.

This of course was kind of stressful because obviously I did NO preparation for having 16 guests inside our condo all evening. Also trying to salvage/cook half grilled chicken, boerewors and veggie kabobs in the oven is not as easy as it seems.  Thankfully the evening wasn't a total disaster.  We have such fantastic friends who all chipped in to help and were happy to cram around our little coffee table for the rest of the evening.

My initial worries of throwing Kingsley the "worst Birthday BBQ ever" faded as the evening wore on and everyone had such a wonderful time.  The party kept going till after midnight when the discussion shifted to our final topic: the likelihood of a Zombie Apocalypse in Singapore. The most important question being, would we try to swim north to Malaysia or south to Indonesia if Singapore became overrun by Zombies. For the record the overall consensus was - south.

BB the Cat

There is a new guest at the Wood house these days but this time it is not kittens.  BB is a 2-3 year old male cat who my friend Sandra has been feeding for the past several years.  He lives by the Starbucks on East Coast Park. About 2 months ago, right before Chinese New Year, he was attacked by a pack of wild dogs in the park.  It was a few days before Sandra found him lying the bushes very near death. She immediately took him to the vet where he spent the next two weeks in Intensive Care.  He was shaved, had a feeding tube put in and was on IV antibiotics for quite some time.  BB finally made a full recovery and is now staying at our house waiting for his fur to grow in and his forever home.

He is such a social and sweet cat.  He loves to follow me around and to just be in whatever room I am in. He loves to be pet and cuddled.  Sandra and I were sure that he would fit in well with any size family.  Last Sunday we interviewed a family with a 16 year old daughter who was very eager to adopt BB.  The only concern we had was they had never owned a pet before. Anyway BB gave it his best try in his new home but sadly it was not a good fit and I went to pick him up late last night.  He is now happily curled up next to me by the computer.


Bangkok - Easter Weekend

We had a wonderful long Easter Weekend in Bangkok at the Dusit Thani hotel.

I always manage to find an animal needing a bit of TLC wherever I go.  Lovely Italian dinner at Govinda.  We had the risotto which was excellent. And yes I put the kitten down and washed my hands before dinner :)

Recipe - Cauliflower Pizza Crust


Yesterday was Kingsley's Birthday and he requested this Cauliflower Pizza recipe as his special birthday meal.  Its gluten free, low carb and best of all delicious! I initially found this pizza crust recipe on Recipe Girl.

Ingredients:
1 medium head cauliflower, cut into florets
1 egg
1/2 cup mozzarella, shredded
1 teaspoon Italian seasoning blend
1 cup pizza sauce/tomato sauce
1 cup Canadian Bacon sliced
1 cup pineapple sliced
3/4 cup mozzarella, shredded
1/4 cup cheddar, shredded

Directions:
Rice the cauliflower with grater (this is the least fun and most labor intensive part of the process), place in a microwave safe dish and microwave for 8 minutes or until cooked.


Place the cauliflower in a tea towel and squeeze as much moisture out as you can.

Mix the cauliflower, egg, mozzarella, oregano, salt and pepper, press the mixture onto a baking mat or parchment paper lined baking sheet and bake in a preheated 450F oven until lightly golden brown, about 15-20 minutes.


Place pizza sauce on top of the crust. Then top with mozzarella, cheddar Canadian bacon and Pineapple slices. Bake again until the cheese is bubbling, about 10-15 minutes.




Whistler - The Gang

Kingsley and I are so incredibly fortunate to have a fantastic group of friends.  The best part of our Whistler trip was getting to catch up and hang out with some super cool people. 

Nothing like a good brain teaser puzzle after a long day of skiing! 

We all took turns making meals.  This was our gluten free, vegan amazing breakfast with green smoothies and fresh squeezed juice from Gulay and Ian.
