Recipe - Almond Flour Cheesy Bread

I found this low carb, gluten free recipe on the alldayidreamaboutfood blog.

I was searching for some kind of healthy recipe that would fulfill the occasional craving for bread.
It has the texture of cornbread but tastes just like a cheesy bread stick. It would be a fantastic recipe to pair with soup on a cool day. In Singapore "cool" means anything below 82 degrees.

1 tsp butter for the pan
2 cups almond flour
1/2 cup flax seed meal
2 tsp baking powder
1/2 tsp salt
1 & 1/2 cups shredded Cheddar cheese, divided
3 large eggs, lightly beaten
1/2 cup butter, melted
3/4 cup almond milk

Instructions
Preheat oven to 425F. Add 1 tsp butter to a 10-inch oven-proof dish and place in oven.
In a large bowl, whisk together almond flour, flax seed meal, baking powder, salt and 1 cup of the shredded cheddar cheese.
Stir in the eggs, melted butter and almond milk until thoroughly combined.
Remove hot dish from oven and swirl butter to coat sides.
Pour batter into pan and smooth the top. Sprinkle with remaining 1/2 cup cheddar.
Bake 18 minutes, or until browned around the edges and set through the middle. Cheese on top should be nicely browned.
Remove and let cool 15 minutes.




Recipe - Cauliflower Pizza Crust


Yesterday was Kingsley's Birthday and he requested this Cauliflower Pizza recipe as his special birthday meal.  Its gluten free, low carb and best of all delicious! I initially found this pizza crust recipe on Recipe Girl.

Ingredients:
1 medium head cauliflower, cut into florets
1 egg
1/2 cup mozzarella, shredded
1 teaspoon Italian seasoning blend
1 cup pizza sauce/tomato sauce
1 cup Canadian Bacon sliced
1 cup pineapple sliced
3/4 cup mozzarella, shredded
1/4 cup cheddar, shredded

Directions:
Rice the cauliflower with grater (this is the least fun and most labor intensive part of the process), place in a microwave safe dish and microwave for 8 minutes or until cooked.


Place the cauliflower in a tea towel and squeeze as much moisture out as you can.

Mix the cauliflower, egg, mozzarella, oregano, salt and pepper, press the mixture onto a baking mat or parchment paper lined baking sheet and bake in a preheated 450F oven until lightly golden brown, about 15-20 minutes.


Place pizza sauce on top of the crust. Then top with mozzarella, cheddar Canadian bacon and Pineapple slices. Bake again until the cheese is bubbling, about 10-15 minutes.




Recipe - Kale, Bacon and Portobella Salad

I am no food photographer so keep in mind this salad tastes much better than it looks in the photo below! It is simple to make and the flavors go so well together. In the rare times I am able to find kale at my local grocery, this is what I make with it. 



Kale, Bacon and Portobello Salad

1 lb. bacon

Kale, including stems, chopped

4 large portobella mushroom caps, stems and ribs removed

4 Tbsp Olive Oil

Garlic, minced

1 lemon


Preheat oven to 375F. In 2 baking dishes, arrange bacon strips in a single layer. Cook 20-30 minutes, until crisp.

While bacon cooks brush 2 Tbsp. olive oil on both sides of mushroom caps. Season with salt and pepper.

Heat remaining 2 Tbsp olive oil over medium heat in a large pan and add garlic. Cook until lightly golden, then add kale. Mix and season with salt and pepper. Cook until softened and bright green, about 5-10 minutes.

When bacon is done, arrange mushrooms in a baking dish and cook for 10 minutes. Flip and cook another 10 minutes. Slice cooked mushrooms and bacon then add to wilted Kale mix. Drizzle lemon juice over salad. Serve immediately.

Cauliflower Hummus


Living in Asia and in the hot humid climate of Singapore often means that certain recipes and ingredients just are not available or are incredibly expensive and difficult to find.

For example, cheese is not used in most Asian cooking, it also typically does not do so well in extreme heat....so in Singapore it is incredibly expensive.  A small block of feta cheese at our local grocery store is over $10.  The ricotta and mozzarella cheese I need in order to make lasagna costs over $30.

After living in Singapore for 3 years, my favorite recipes have slowly evolved and in many cases have shifted to have a strong Asian influence. Although I still make lasagne on (a special) occasions, a more common recipe I might now make is a fantastic Thai Yellow Curry.

Being in Asia has also made me more creative in trying out new ways to make things in order to satisfy a certain craving.  This cauliflower hummus recipe is a result of a serious hummus craving this week and it turned out to be just as good (if not better) than the "real thing".  I found a basic recipe online then added my own (asian) twist to it with a bit of soy sauce and cayenne pepper.

Ingredients
1 medium head cauliflower, broken into small florets
1 clove garlic
1/3 c. tahini
2 tbsp. lemon juice
2 tbsp. olive oil
1 tbsp. soy sauce
cayenne pepper to taste
lemon wedges, olive oil and parsley for garnish
fresh veggies for serving

Instructions
Preheat oven to 400 degrees.
Place cauliflower  on baking sheet. Drizzle with olive oil.  Roast for 40 minutes, stirring halfway through cooking time. Remove from oven and cool.
Combine roasted cauliflower, garlic, tahini, lemon juice, olive oil, soy sauce and cayenne pepper in a small blender. Process until smooth. Add water one tablespoon at a time for a thinner consistency, if desired.
Drizzle with olive oil and sprinkle with parsley, if desired. Serve with lemon wedges and fresh veggies.
