Hong Kong - Fresh Fish Sold Here

In Asia it is incredibly important that food is fresh...very fresh.  In the US we have come to prefer our food to look a little less like its original form (i.e. head not attached) but in Asia that would mean a serious compromise in freshness.  So heads, feet, scales and feathers are kept intact for as long as possible.  Which makes for more excitement than the grocery store!
